Rustic Sourdough Bread

A lean bread, our Rustic Sourdough is made with just flour, salt, water, and whole wheat sourdough starter. With a mild tang, it's a high hydration bread with a medium acidity.
We mill the flour for this bread from Expedition, a hard red winter wheat that we grow on our farm. About 60% whole wheat, our Rustic Sourdough is made with our most sifted flour; the technical term for this is a "high extraction" flour. This means we sift out all of the coarse bran and as much of the fine bran as we can separate.
When we first started making this wholesome bread, we used some of our own flour and some King Arthur White flour. These days, we make it with all our own stone-ground flour, like all our other whole grain breads.
A multipurpose bread, it goes great with soup and salad; it also makes a great PB&J, grilled cheese, or BLT!
