Mildly lactic from our sourdough culture, this bread is made with 70% Farmer Ground whole wheat flour and 30% Farmer Ground high extraction flour. High extraction flour has a bran content roughly halfway between standard whole wheat flour and standard white flour, so this bread is a little lighter than a 100% whole wheat bread. Pre-sliced loaves are perfect for sandwiches, while unsliced loaves can be cut into thick slabs to go with soup or salad.
